It’s a Friday night after a looong week at work: what better way to celebrate the end of the week and Cinco de Mayo weekend than by making homemade guacamole! I have written my recipe below, however, I have to leave the diced tomatoes and red onions out since my husband does not care for either. Regardless, I need to go out to the store to get more avocados: this batch will be gone quickly!
2 ripe avocados
2t lime juice
2t minced garlic
1T diced red onion
1T diced tomatoes
1/2 t salt
1/2 t Pirates Bite Spice Blend (This spice blend can be purchased here through the Spice and Tea Exchange: https://www.spiceandtea.com/pirate-s-bite-spice-blend.html)
1t cilantro
Mash the avocados and add the lime juice. Stir to combine. Add the garlic, red onion, and diced tomatoes. Fold into the mashed avocado and lime. Add the salt, Pirates Bite Spice Blend and cilantro. Stir to combine.
We like to enjoy this guacamole with chips, tacos, nachos, or fajitas.
