The Best Pork Carnitas

My mom was requesting that I share this recipe, so here it is! We enjoyed carnitas this evening for Cinco De Mayo: I hope that your family loves them as much as mine does!

Ingredients:

2 lb. pork tenderloin (typically, it takes two pork tenderloins. Aldi https://www.aldi.us sells them in two-packs, unseasoned so you can make them your own. Check them out!)

1t salt

1/2t pepper

2t cumin

1/2t chili powder

1/2t onion powder

1/2t garlic powder

2 chipotles in 2T adobo sauce, finely chopped

1T lime juice

1/2C fresh squeezed orange juice

1T dried cilantro

Nonstick cooking spray

Directions:

Preheat the oven to 350. Place the pork tenderloin(s) in a Dutch oven or a large oven safe pot.

Add salt, pepper, cumin, chili powder, onion powder, garlic powder, chipotle chilis with adobo sauce, lime juice, orange juice, and cilantro.

Put lid on the Dutch oven/pot and put it in the preheated oven. Cook for 90 minutes, then carefully turn with tongs. Replace lid and put back in the oven to cook for 45 minutes more.

Remove the pork from the oven and let it rest, covered for 10 minutes. Cover a rimmed baking sheet for with aluminum foil, sprayed with nonstick cooking spray. Take two forks to shred the pork on the prepared baking sheet, while reserving the remaining sauce in the pot. Preheat the broiler and place the pork for 3-5 minutes under the broiler: check it often to make sure it doesn’t burn.

Add the pork to the remaining sauce and toss until coated. Serve the carnitas with tortillas, guacamole, salsa, cheese, and any other preferred toppings.
