We had a filling lunch with my parents today, so dinner tonight is simple: we’re having Greek Cucumber Salad with pretzel rolls from Lidl. The cucumbers and mini sweet peppers were in our Madness Box from Misfits Market. The Feta cheese and Greek dressing were from Aldi. The only thing that would have made this light salad even better would have been some kalamata olives: I usually have them on hand, but didn’t this evening since they go away quickly in my house.
